Muamba de Galinha!
This is Angolan chicken stew. When I was looking at this recipe, I honestly had my doubts. The combination of things in this stew did not make sense to me. But, we were going to try it! Along with the Muamba de Galinha, we made Lemon Salad and Cosa-Cosa Camarao (Hot-Hot Prawns). It was quite an interesting combination of foods. Here's what I did:
- Combine the lemon juice, garlic, salt and chili powder, and chicken to marinate for 3 hours.
- Heat palm oil over medium heat in a pot, and add chicken mixture to brown.
- Add the remaining ingredients, bring to boil, cover, reduce heat, and let simmer until the chicken is cooked and squash is cooked - about 15 minutes.
- Enjoy!
- Take 2 TBSP of the fennel fronds, finely chop them and whisk them together with the lemon juice, avocado oil, and salt.
- Thinly slice the fennel bulbs and toss with the dressing.
- Sprinkle the salad with the parmesean cheese.
- Enjoy!

- To make the sauce, combine the chilis, garlic cloves, lemon juice, pinch of salt and avocado oil in a food processor. Process until a sauce is made, and everything is blended well.
- Marinate the shrimp in the sauce 24 hours.
- Heat your BBQ and place the shrimp on skewers (4-6 per skewer).
- Grill shrimp on medium-high heat, 3 minutes per side, or until they turn pink.
- Serve immediately.

The verdict? I was VERY surprised at how good all three of these dishes were! The soup, surprisingly, went together very well. It was still strange, but the veggies and broth worked together. It was even better the second day! The original recipe had you cook bone-in chicken, which I think would have made the chicken more tender and not taste overcooked, but it was still quite good. I loved the salad - it was fresh and light, and the fennel taste wasn't super strong with the lemon and cheese. Now for the shrimp, I have to tell you, I do not like shrimp. I don't like the smell, taste, or texture. There is just something about them that is not good. However, this grilled hot-hot shrimp was delicious. I loved them! Maybe it was the sauce; maybe it was the grilling, I don't know. But this is how I would eat shrimp. So very good!
